Scientists have encouraged us to limit the egg yolks in our diets because they contain cholesterol .Dietary cholesterol from eggs increases the ratio of total cholesterol to high-density lipoprotein cholesterol in humans.Eating eggs regularly may increase your risk for high blood cholesterol.

One egg with its yolk contains about 213 mg of cholesterol and recommended cholesterol intake to no more than 200 mg per day. So if you eat two fried eggs or a three-egg omelet for breakfast, you are already well over your cholesterol limit for the day.

How to Reduce Your Risk

Take these actions to have a healthier heart.

  • If you don't know your blood cholesterol level, have it tested.
  • Limit your cholesterol to less than 200 mg per day.
  • Eat no more than three egg yolks per week.
  • Use only the egg white, not the yolk in your cooking. Substitute two egg whites for every whole egg in recipes. Or, use egg substitutes or reduced-cholesterol egg products.
